I need some help.  I"m trying to come up with ideas for cookie trays for Christmas.  I don't want everyday chocolate chip cookies in them but I want to know what people think of when they see a cookie tray.  I have some ideas of what cookies to put on there but I need a little direction. I know Christmas is really far off but I need to try out recipes and make sure they work.  Here are some ideas that I have.
Jam sandwiches (butter cookies filled with jam)
chocolate hazelnut diamonds
coconut macaroons
black and white spiral sable cookies (a French butter cookie)
Chocolate dipped pistachio shortbread
molasses spice cookies or gingerbread (I hate frosting cookies though)
mint cookies (andes mint covered in cookie dough drizzled in chocolate)
Am I missing anything?  And are there cookies that should be left out and replaced with others?  I'd really love to know what people think.

Ina Garten hosts a holiday cookie exchange at her hampton's home for the top 6 food bloggers of the year. This is what they had: http://www.lhj.com/recipes/holidays/christmas/ina-gartens-holiday-cookie-swap-recipes/

I LOVE the peanut butter cookies with snickes inside drizzled in chocolate. I also like sallysbakingaddiction.com . She has some good recipes. She loves pb though! Good luck! Baby Lee wants to eat them. :)

jam sandwiches are my least favorite, but a lot of people like them.

everything else i would eat in a heartbeat! yum!!!

also, the apple cider ginger cookies and gooey cinnamon bars from ina garten's party sound really good.

Macaroons sound awesome-- people would think they're really fancy, and a bit unexpected, so those are my favorite choice.
I like the mint cookie idea too. very Christmas-ey.
Sounds like a good mix to me, and not just taste-wise, but aesthetically, too. Different colors and textures.

The only suggestion I have to do one chewy, home-style cookie-- like a chocolate chip cookie but maybe something a little different. All the drier, crunchier cookies like gingerbread or shortbread are things people just buy at stores a lot, so people are probably craving a simple, gooey "comfort food" cookie. I don't know if that makes sense at all, but those are my thoughts!

I have an awesome gingerbread cookie recipe you can try out if you're interested. It's not frosted, but sugared. And they're really thick & chewy.

I like the thick and chewy gingerbread without frosting...personally. :) I also love the Andes mint cookies! I've never had the hazlenut ones, but how can you go wrong there?! I'm not a jam cookie lover either, but love the chocolate cookies with PB chips...different, but easy. :)

I want to be on your recipient list!!! :) My college roommate also just published a book on macarons and has a template in there for Christmas shapes that would be fun.
