Valentine's Menu

Shawn and I never do anything big for Valentine's Day.  Shocking I know.  I do like to make a really good dinner to at least make the day feel a little special. I'm starting to think about what to make and I need some input.  I"m thinking something pretty simple because Shawn may not be home until late and I don't want to do anything too heavy because Caroline's birthday will be only a few days later.  I'd ask Shawn but he'll just say, "Whatever you think would be fun." or "Something good."  He's so helpful.
Option 1
Butterflied chicken with roasted potatoes and blondies for dessert.
Option 2
Bacon wrapped pork tenderloin medalions with maple mustard sauce and asparagus and raspberry streusel bars.  This is probably not as simple but come on, bacon wrapped anything? YUM!
Option 3
calzones with guacamole and chocolate mousse.
I've already put way too much thought into this, but I can't wait!

option # 2 and can I come? #1 sounds really good too and all these options sound ubercomplicated and fancy to me. When I say "simple" I'm talking mac n cheese. :)

your an inspiration.. on our special dinner nights, I make someone else cook. But now that I am going to be a mom i am trying to be better. Tonight i am even making rice and veggies.. i know crazy...hey, its a step. miss you carrie and your cooking.

I vote for the bacon wrapped pork tenderloin. You're right: anything wrapped in bacon is better!
